I love me some fresh fruit in the summer. I could live off of fruit and be perfectly happy. I especially like blueberries, I eat them every morning on my cereal and I like to put them in my salads at dinner. I read about freezing them a few years ago, so you can eat them when they are out of season, and I thought I would share how I do it. It’s really simple.
When blueberries are in abundance and looking really good, and cost less than normal, I buy a lot. After I rinse them, I just take a cookie sheet and put some parchment paper on it then spread the blueberries, still wet, on the cookie sheet in a single layer. Pop them into the freezer for a few hours and put them in a labeled freezer baggie when they’re frozen. I use a baggie so I can stack them on top of each other and not use a lot of space. See…easy.
I also like to freeze bananas for smoothies. If you have ever tried to freeze a banana with the skin on and then remove it, you know how hard it is, it actually hurts your fingers from the cold. I like to have single servings of bananas so I just cut a banana in half, or thirds, and remove the skin. Then I cut the halves up and put it into a sandwich bag and in the freezer. Really easy and you have a single serving of banana when you want it. Just pop it out of the freezer and throw it in your blender. This is a good thing to do with those really ripe bananas that you don’t want to throw away, but you don’t know what to do with.
I’m sure you could do this with any fruit that you enjoy and want to use in the off season or for a smoothie.
