It’s funny how you find things when you aren’t really looking for them. Last weekend we were organizing the basement when I came across my mother-in-law’s recipe for the sour cream coffee cake that she always used to make.

It’s strange that I happened to come across this recipe now because we’ve been thinking about her a lot lately. It’s a year this month that she passed away, plus it was the first Christmas without her, so our thoughts have naturally been about her.

My husband loved her cake, actually he loves anything sweet, so I thought I would bake one for him in remembrance of her.

Easy Sour Cream Coffee Cake

Prep Time 15 minutes
Total Time 1 hour 15 minutes
Servings 8 servings


  • 3/4 cup butter softened
  • 1 1/2 cup sour cream
  • 1 1/2 cup sugar
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 3 cups flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup walnuts or pecans
  • 1/2 cup brown sugar
  • 1 tsp cinnamon


  1. Preheat oven to 350

  2. Beat together butter, sour cream and sugar

  3. Add eggs, flour, baking powder, baking soda and salt

  4. Mix well

  5. Combine nuts brown sugar and cinnamon; set aside

  6. Pour 1/2 of your batter in greased bundt or tube pan

  7. Sprinkle nut mixture over batter

  8. Add the rest of the batter over nut mixture

  9. Bake for 50-60 minutes

My MIL was a good cook but I didn’t see her bake often. She did have this recipe in her cookbook though, for those occasions when she needed to bring a baked good. She wouldn’t bake cookies or brownies, it was always this coffee cake recipe.

I pulled out my trusty bundt pan for my coffee cake but my mother-in-law always used her tube pan. Either way will work.

I think the reason she always returned to it was because it was easy to make and it always got raves when she did make it.

This was the first time I made it and it was really easy. I can’t say it’s particularly good for the waistline but it’s delicious and the hubs enjoyed it. It also brought on all kinds of fun stories about her while I was making it.

We usually make a big breakfast on Christmas morning, including French toast and eggs, and this year I wanted to make a little sweet treat for them.  These easy sweet and salty Nutella crescent rolls that I came up with fit the bill.

My husband is a huge fan of chocolate croissants, like totally obsessed, so this one was a no brainer. These were so easy to do, which I love, and…hello?…how can you go wrong with Nutella?

The plan was to make the Nutella crescent rolls with a dusting of powdered sugar on top. Now, I am not a huge sweet treat fan so I didn’t plan on eating any. When I was making them though, I decided to sprinkle a little coarse salt on half of the rolls at the last minute.

I may not like a lot of sweets but give me a jar of Nutella and a bag of pretzels and I am happy. 

I did a bit of test baking last week to see how they would turn out. You guys, OMG…I loved the salty ones and, of course, the hubs couldn’t get enough of the sweet rolls.


They passed our taste test so I’ll be making them on Christmas morning for the whole family. Hopefully the kids will like them as much as we did.

Cook Time 15 minutes
Total Time 25 minutes

  • Crescent Rolls
  • Nutella
  • Coarse Sea Salt
  • Powdered Sugar


  1. Preheat oven to 375

  2. Unroll crescent rolls and separate into 8 triangles

  3. Spread 1-2 heaping teaspoons of Nutella on each triangle

  4. Roll triangles up, starting at smallest side 

  5. Place rolls on ungreased cookie sheet 

  6. Sprinkle coarse salt on desired rolls

  7. Bake for 15 minutes or until golden brown

  8. Let cool 10 minutes

  9. Sprinkle powdered sugar on unsalted rolls

I’m not a morning person, or a huge fan of breakfast, so it’s a pretty big deal when I find something that I like to eat (or in this case, drink). What’s been my go-to for the past year? A yummy kale blueberry smoothie.

I know…


When it’s in a smoothie and disguised with fresh fruit…absolutely!

So let’s talk about the pros and cons of this yummy liquid breakfast, shall we?

Pros – it’s delicious, nutritious and quick and easy to make. Not only that but you don’t need an expensive machine to make it. I’ve been using our trusty, old blender and it works just fine.

Cons? Well…none in my book.

To be honest, when I started drinking this smoothie I was getting them custom made at Whole Foods every day. Either the hubs or I would pop in the night before and have them make it up for me. I’d put it in our fridge and it would be there for me when I got up the next morning. Yes, it was super easy but also pretty expensive.

Actually, the reason I didn’t start making them for myself sooner was because I didn’t want to buy a fancy, expensive blender (which I thought we needed to make it). Once Whole Foods raised their smoothie prices though, I decided to do it on my own using the blender that we had. If it didn’t work, then I’d think about buying a new one.

I’m happy to say that our old blender has worked just fine. I did have to make a few adjustments so it would blend better, but I’m loving the new recipe, plus I can make two at a time. One for that morning and the second one gets a cover on it and is good until the next day.

One adjustment I did have to make using our blender (verses a Vitamix) was to use fresh bananas instead of frozen. Too much frozen fruit is tough on an old blender (ours anyway) so I go with fresh when I can. You still need some frozen fruit, to add thickness to your smoothie, but it doesn’t all have to be frozen.

This is a version of the smoothie that I used to get at Whole Foods every day. I’ve perfected it over time to suit my taste and I like to change it up slightly every once in a while by adding fresh strawberries or mango. That’s what’s so great about this, you can make it so it tastes good to you.

I’m still not a morning person, but I do look forward to my smoothie everyday.

A quick and easy Kale Blueberry Smoothie recipe for a delicious and nutritious breakfast or even a snack.

  • 1 pitted date
  • 2 TBSP flaxseed or hemp hearts
  • 2 cups kale
  • 1 ripe banana
  • 1 1/2 cups frozen blueberries
  • 1/2 cup frozen pineapple
  • 1 3/4 cups coconut water


  1. Add all ingredients to blender and mix 1 minute or until smooth. 

    *you may need to add more coconut water if mixture seems too thick

Easy Banana Bread with Chocolate Chips

Prep Time 10 minutes
Cook Time 1 hour 10 minutes
Total Time 1 hour 20 minutes
Servings 8 people



  • 3 very ripe bananas
  • 1 egg beaten
  • 1 tsp. vanilla extract
  • 1/3 cup butter room temperature (plus more for greasing loaf pan)
  • 1 tsp. baking soda
  • 3/4 cup sugar you can add 1/4 more or 1/4 cup less according to your taste
  • 1 1/2 cups all purpose flour
  • pinch of salt
  • 1/2 cup mini chocolate chips


  1. Preheat oven to 350° (175° C). Grease a 9x5 inch loaf pan.

  2. In a large mixing bowl mash bananas with a fork (I use my clean hands) until smooth. Add softened butter to mashed bananas and mix well.

  3. Add the baking soda and salt to the banana mixture.

  4. Next add the sugar, egg and vanilla.

  5. Add in the flour and mix well. Stir in the mini chocolate chips.

  6. Pour batter in your greased loaf pan.

  7. Bake for 1 hour to 1 hour 10 minutes at 350°, 175° C, until toothpick inserted in the center of the loaf comes out clean.

  8. Cool on baking rack for 15 minutes.

  9. Remove from loaf pan and cool completely.

I’m not a sweet eater but I can’t pass this up. It’s the perfect snack to have with my nighttime cup of tea.

I have always been the baker in our house. There is one exception during the holidays though when the hubs steps in to make his mother’s Toffee Squares.

Now, you know they are super easy if he’s putting his baking apron on, so if you need a quick, easy and yummy treat, these are it.

Seriously easy…and who doesn’t love melted chocolate spread on a cookie. Yum! I think chopped almonds would be good on these too but my husband won’t stray from the recipe. Maybe I’ll try some next time. 😉

Toffee Squares

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 2 dozen


  • 1 cup butter 2 sticks room temperature
  • 1 cup brown sugar packed
  • 1 egg yolk
  • 1 TSP vanilla
  • 2 cups flour
  • ½ TSP Salt
  • 3 or 4 Hershey bars 1.5 oz each or 1-(7-oz big bar)
  • ½ cup chopped walnuts


  1. Preheat oven to 350°
  2. Cream butter, sugar, egg yolk and vanilla.
  3. Stir in flour and salt until blended with a big giant metal fork.
  4. Pat into 13X10 GREASED baking sheet.
  5. Bake 20 - 25 minutes until lightly brown, (will be soft at this point)
  6. Remove from oven.
  7. Put chocolate bars on, let melt for about 2 minutes.
  8. Spread chocolate evenly, sprinkle with chopped walnuts.
  9. Cut into squares while still warm and soft.
  10. After they cool a of couple hours, they can be removed from baking sheet (they'll be crunchy now)

One of the things I love most about the holidays is baking cookies. Since I hurt my back, I’m not able to bake as much as I like but this year I’ve already baked, and ate, a couple of batches of peanut butter cookies. Actually they are flourless peanut butter cookies. I’ve been trying to do gluten-free for a while now, for health reasons, and I’ve found some great recipes to try. These are the easiest cookies ever and only require a few ingredients, that you probably already have in your pantry, plus they taste great. You’d never know they were gluten-free.

Easy Flourless Peanut Butter Cookies

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 2 dozen small cookies


  • 1 cup sugar I don't like my cookies real sweet so I used 3/4 cup
  • 1 cup peanut butter I used Smucker's Natural. I've read that some natural peanut butters may be too oily. I had no problems
  • 1 tsp. vanilla extract
  • 1 large egg slightly beaten
  • *I added 3 heaping teaspoons Justin's Vanilla Almond Butter to my regular peanut butter.


  1. Preheat the oven to 350 degrees. In a medium bowl, mix peanut butter, sugar, vanilla and egg until well combined. Scoop or spoon onto parchment or Silpat covered baking sheet. Use fork to flatten mounds and make crosshatch marks.
  2. Bake for 10-12 minutes. Let sit for 1-2 minutes before moving cookies to baking racks to cool further.
  3. *you could sprinkle course salt on top before baking or add chocolate chips to batter.

I’ve made these a few times over the past month and wanted to share some things I learned. The recipe calls for 1 cup sugar but I thought they were very sweet so I cut it to 3/4 cup the last time I made them, much better IMHO. I may be daring the next time and try 1/2  cup…I know, I’m such a rebel. 😉 I also tried course salt sprinkled on top before baking and we added some chocolate chips into the batter (at my husband’s request). All were good but I liked them less sugar, no salt and no chips the best. That is what’s great about this recipe, you can change it up and make them the way you like.
